Food Service and Housekeeping Coordinator

JOB FUNCTION:
The Food Service & Housekeeping Coordinator (FSHC) is responsible for the dining and cleaning services on the Blairstown Campus of the Princeton-Blairstown Center under the direction of the Blairstown Site Manager. The FSHC designs and helps prepare well-balanced meals with a concern for quality, sustainability, presentation, safety and cost. The incumbent actively leads both staff and participants during restorations.* The FSHC oversees and participates in the planting and maintenance of our organic garden and uses its produce in the preparation of meals. The Food Service & Housekeeping Coordinator supervises food service, gardening and cleaning personnel, orders food, maintains a clean kitchen and dining hall and manages the food and cleaning budget. In the late fall and early spring when we have only a few small groups the FSHC will work independently; during our busiest season, in the summer and early fall, the FSHC will manage several full and part time staff. The FSHC will work with the Blairstown Site Manager to determine appropriate staffing levels to correspond with the seasonal work needs.
*Restorations- When delivering programming to groups, we employ the idea that everyone is responsible to leave the facility in at least as good a condition as it was when they arrived. This translates into participants helping us set up for meals and clean up after meals in addition to cleaning the washhouses and their cabins before going home. The FSHC will work with participants and facilitators in the restoration of Egner, our kitchen and dining hall facility. When we have “Facility Usage” programs we provide meals but the groups do not have the same level of “restorations.” FSHC would coordinate, and participate, in the cleaning of the cabins, washhouses, and other buildings.
PRINCIPAL ACCOUNTABILITIES:
- Responsible for the planning, preparing, and presenting of a variety of foods, including vegetarian option, at every meal.
- Orders and stocks appropriate amounts of food, working within the budget.
- Plans and maintains our organic garden and utilizes the produce in the kitchen.
- Maintains a safe and sanitary kitchen in accordance with all State and Federal regulations, adhering to PBC policies and risk management standards.
- Prepares meals for camp site and trail experiences.
- Responsible for hiring, training, kitchen and housekeeping staff in conjunction with the Blairstown Site Manager. Delegates tasks as appropriate.
- Schedules kitchen and cleaning staff as needed. This will fluctuate significantly through the year.
- Ensures that the kitchen, pantry, walk-in are clean and organized.
- Coordinates the cleaning of the facilities when we have “Facility Usage” groups.
- Works in conjunction with the Blairstown Site Manager to develop sustainable practices including searching for local and organic foods which can feasibly be purchased with our budget.
PROFESSIONAL RESPONSIBILITIES:
- Participate in staff meetings, staff development opportunities and planning sessions as indicated by the Blairstown Site Manager.
- Presentation of a professional demeanor—which is reflective of the values and standards of the Princeton-Blairstown Center—in all formal and informal contacts with the Center’s constituencies
- Other duties as assigned and appropriate to the Center’s mission.
QUALIFICATIONS:
- Minimum of High School diploma is required. Training as a chef at a school for culinary arts or a Bachelors degree in a related field is preferred.
- Two or more years experience as a cook.
- One or more years experience managing others.
- One or more years experience gardening.
- Strong interpersonal skills with the ability to receive and give direction to others. Ability to work with a diverse set of staff and participants.
- Ability to develop menus and prepare a wide variety of well balanced meals.
- Ability to read, write and follow verbal and written instructions.
- Flexibility in scheduling, ability to work a variety of hours and weekends.
- Ability to lift and carry at least 50 pounds.
- Comfortable working with Microsoft Excel and Word documents and Microsoft Outlook.
- Certifications: First Aid, CPR and valid driver’s license required. EMT, WFR or AFA preferred.
