Role of the Sustainability Manager
Tom Nyquist announced Shana Weber has accepted the position
of Sustainability Manager. Shana will report directly to
Tom. Stu Orefice, Katherine Hackett, Dave Wilcove, and
Barclay Satterfield volunteered to work with Tom on
identifying responsibilities and priority projects for Shana
that will help save the University money and improve the
quality of life on campus.
Katherine Hackett stated the committee should learn what
other universities - such as Yale, Harvard, and Stanford -
are doing on sustainability issues. Princeton should be a
leader in this field.
Farmer’s Market on Campus
Kathryn Anderson reported Greening Princeton is planning to
host a Farmers Market on the south side of the Frist Campus
Center in the spring. Vendors are currently being screened.
Kathryn stated Risk Management has approved the project.
Farmers must have organic or locally grown produce, proper
insurance forms, and meet a specific list of criteria. The
event will be publicized through the Department of Community
and State Affairs, Princeton Weekly Bulletin, the Daily
Princetonian, and the Princeton Alumni Weekly magazine.
General Discussion of Food Matters
Proposal by Rita Hindin ‘75
The Committee discussed the Food Matters proposal and vision
statement presented by Rita Hindin on February 8. The
committee agreed on the following:
- Rita presented some good ideas.
- PEOC supports Dining Services and
Greening Princeton’s initiatives.
- Princeton is working to improve
sustainability and the quality of food and dining
program. A Sustainability Manager has been hired who
will work on projects with Dining Services and Greening
Princeton.
- The Task Force on Health and Well
Being supports the efforts of Dining Services and
Greening Princeton.
- PEOC reaffirmed its position that
Faculty should be involved in Rita Hindin’s proposal.
